Apple Raisin Fritters

 

I asked one of my sons if there was anything special that he would like me to make. Something his friends take for granted that we can't have. There are so many delicious things out there and everyone has a hankering now and then for something different!

Well he replied, That he would just love to have some Apple Fritters! These are a donut variation. Apparently, way back when we could eat, or thought we could eat at doughnut shops, his favorite was Apple Fritters. So here is a donut recipe that is gluten free!

 The fritters were delicious, I even made a huge batch to take with us on a trip, we were meeting people two hours from where we live and didn't know if there would be any place to get a gf snack. When we got there, everyone was hungry, traffic had been awful, and our friends who met us there and are not on a gf diet, loved them too!

Gluten Free Apple Raisin Fritters

Place
4 Cups or entire 700g package of Astoria Mills Italian Bread & Pizza Mix # 5 in a bowl.

In a separate bowl beat
3 eggs 
1 1/2 cups cold water
1 teaspoon pure vanilla extract
1/4 cup sugar or honey

Blend the Astoria Mills Mix #5 together with the wet ingredients and and let mixture rest for 2 hours at room temperature or over night in the fridge. The dough will keep in the fridge uncooked for 2 days.
 

When ready to make the gluten free apple fritters, stir into the dough,

2 fresh apples cut up in small chunks &
1/2 cup raisins
 

Variation: For the donut holes I made for the Toronto Celiac Support Group meeting I followed the first directions and instead of adding apples and raisins. I added 1/2 cup of raisins soaked in boiling water and cooled. 1 teaspoon pure vanilla, 1 teaspoon baking powder and instead of the extra sugar, I added 1/2 cup of apricot jam. Mixed it all up and added a bit more Mix #3 to compensate for the added liquid. Then kneaded, rolled into logs, cut in small pieces and rolled into small donut hole size donuts. Then followed the rest of the directions, deep frying in a wok and rolling in cinnamon sugar. These are best the day they are made, but heated slightly the 3rd day they were still awesome! And yes, you could make larger donuts with this. You can flavor the dough any way you like to make any kind of donut. Even jelly filled if you have th inclination.

Prepare a deep fryer or wok with about 2 inches of vegetable oil. Heat gently, when oil is hot place about 4 or 5 large spoonfuls of the dough at a time, into the hot oil and fry gently on both sides.ntil golden brown. ( If dough has been refrigerated, let stand for half hour to warm a bit) Using a slotted spoon remove the fritters from the hot oil and drain on a paper towell. Sprinkle with cinnamon sugar, and enjoy them warm or cold.

Makes a dozen or so apple fritters ... they are soooo good! We took some along on a trip and they were oh so good with a coffee along the way.

Perhaps a child will be attending a camp or event and you need help to be able to assure they have a safe and enjoyable diet while in your care. 

Astoria Mills Italian Bread & Pizza Mix # 5 won't spoil in the package, you can turn it into an egg free Wilderness camp or Hunt Camp bread by just adding a teaspoon of ground flax seeds and a teaspoon of ground chia seed to the mix. To activate, just add water! What could be simpler to explain to your Scout leader. I came up with this idea when my sons had to go on scout trips, and the food fare was all wheat! Mix 2 hours ahead (or when camping, just mix at night for morning, cook on the campfire and keep some for lunch as you backpack) and fry on a camp stove like Newfie bread, or use as a scout bread. This method was even tried as bannok and passed the taste tests! Easy, Nutritious and safe! Maybe you should send enough for everyone. This is even easier than wheat bread.

Did you know you can use Astoria Mills All Purpose Mix # 1 to dredge meats in before you pan fry them? Try adding salt and pepper and dredging liver and then pan frying. Delicious. Also good for chicken or pork chops.
