Make Ahead Christmas Morning Buffet Everyone will enjoy

At this time of year many of us are planning the things that will grace our tables over the holidays. I'm doing the same, hope this helps you in some way. Merry Christmas, Happy Hanukkah, Happy New Year and Holiday Blessings to you and yours.

B&B Bob’s Breakfast Casserole - By Trina Astor-Stewart

Make this casserole the day ahead and pop it in the oven in the morning so you can relax with guests and yet ‘the hungries’ will be taken care of. For a family gathering or brunch where you have guests who require a gluten free diet and those who do not, this is an easy casserole everyone will enjoy.

Step One: Assemble potato mixture for baking.

Peel and grate 4 large potatoes and toss with
½ teaspoon salt, and pepper each
1 tablespoon sunflower oil
3 strips  raw bacon cut into small pieces.

Mix all above together and spread onto a baking tray (cookie sheet) and bake at 400 F. for 25 minutes or until potatoes are browned and bacon is crisped.

Step 3: While potato mixture is baking, grease a 2 quart casserole dish and assemble other ingredients ready for assembly.

3/4 cups Cheddar cheese, grated
1 cup cubed Ham (use ham with bone in as pressed hams may not be gluten free)
½ cup mild salsa
1/2 cup chopped green onions  
3/4 cups Mozzarella cheese, grated

Step 4. Layer potatoes and other ingredients to fill casserole dish. Top layer should be Mozzarella cheese.

Step 5:
Cover layered casserole with
5 Eggs, beaten with
3 cups milk

Cover Casserole with plastic wrap, refrigerate. Bake the next morning in a 350 °F oven for 40 to 45 minutes or until a knife inserted in the center comes out clean. Let stand a few minutes before serving.
Serves 6 or 8.

Decorate your breakfast table with an edible centerpiece of oranges, tangerines, kiwi & bananas. A variety of cheeses and a dish walnuts and pecans and cashews.

Small new jars of jelly or jam. If you are also serving wheat rolls for guests, make sure you have a tray of jellies labeled only for my gluten free guests, to avoid accidental cross contamination.

Hot Camembert Dip

Place a round of camembert cheese in a microwavable container. Sprinkle a scant bit of Cayenne pepper on top plus 2 tablespoons brown sugar. Top with a few fresh or frozen whole cranberries. Microwave to just melt the cheese, stir together and serve warm.

This is great with my Artisan Bread recipe contained in Gluten Free Goodies.

Gluten Free Breakfast Bread for dipping,

 Tell only your gluten free guests that this is gluten free, so of course they will have some. No one else will think it is regular bread and won't know this is Gluten Free! Too bad, sometimes the meer mention of it will put people off, so let them know later! After they have raved about it.

For and easy make ahead breakfast bread, make the dough. Rolled it out like pizza dough, brush with a little olive oil, and sprinkle with a bit of salt. Let rise 1 hour, freeze ready to bake on Christmas morning. All you have to do is lift it from the freezer, place in a cold oven and bake. Bake this first then the B&B Bob’s Breakfast Casserole

Serve by cutting or tearing off pieces.
