Mock Rye Mix #5

Light Corn Bread Recipe

Light n Fluffy Corn bread

Low fat, Extra Fiber and Nutrition - Easy to make, and it is light and fluffy. A lovely breakfast or snack bread.

Blend dry ingredients together
1 tablespoon blond flax seed & 1 tablespoon Chia Seed –ground in coffee grinder - (optional)
1 tablespoon psyllium husk powder (course grind) -(optional)

3/4 cups yellow corn meal
3/4 cup Astoria Mills All Purpose Mix #1
2 tablespoons baking powder
½ teaspoon salt

Whisk together in a separate bowl,
2 eggs, lightly beaten
1 cup milk
4 tablespoons oil

Blend wet ingredients to dry and whisk smooth.

Wait a minute before adding extra Rice flour Mix as the batter will swell a little with all that fiber.
Pour into a greased/oiled oblong loaf pan skillet,
Bake in a 350 F pre-heated oven until it tests
done, about 25 minutes.

This morning I felt like some corm bread and wanted to make it with added fiber as well. I whipped this up in about 5 minutes. I always have my 2 rice flour mixes ready with which I can make almost anything. Chia seed is very nutritious and goes a long way.
